RECIPE: MACADAMIA CRUSTED BARRAMUNDI (serves 4)
- 4 x 180g barramundi fillets, skin removed
- 1/2 cup macadamia nuts
- 1/2 cup panko breadcrumbs
- 1 tbsp. parsley, chopped
- 1 tbsp. chives, chopped
- 1 tbsp. butter
- 2 tbsp. olive oil
- Finely grated rind of one lemon
- Salt and pepper to season
Combine all ingredients (except for fish) in a food processor. Pulse until a rough crust forms.
Place fish into Airfryer and select Fish icon. Start to cook.
Halfway through the Fish program, turn over barramundi fillets and divide crust evenly on the top of each fillet.
Continue cooking. Serve with steamed vegetables.
